Quince is a target of ours for the Chinese New Year. We have salmon and white quince. Double quince is increasing in popularity, and it comes in red, pink, and orange, though when forced early the colors are washed out.

The Tillamook Cheese Factory is a coop of local dairy farmers. I grew up on a dairy farm and was expected to take over the family farm–but i chose flowers instead!

We are cutting White Quince right now and warming up. We are now working on salmon quince. Salmon quince when forced early is very pale in color. The closer it gets to natural blooming period, the richer the color.
